- 4 Cabbage Leaves, large
- 1 pound Ground Beef reduced fat
- 1 cup cooked Brown Rice
- 4 Eggs
- 1 tablespoon All Purpose Seasoning, no salt
- 2 cups V8 low sodium
I used to make this at some of the health care accounts that I ran, I forgot how good they are, feel free to add other ingredients to the filling. They are nice and hearty. These will take a little over an hour start to finish.
Directions:
Boil or steam the cabbage until tender, 10 minutes or so. Preheat oven to 400 degrees. Mix the ground beef with the rice, egg, and seasoning. Fill the cabbage leaf with the mixture and roll. Place seam side down in a baking dish and cover with the v-8 juice. Cover with foil and bake for 45 minutes.

I adore cabbage rolls but always got them from the deli – this sounds so easy that I am going to try making some and will let you know what I think. I am already thinking substitute, canned spicy stewed tomatoes instead of V-8?
Hi Sylvia. Yes you could def. use stewed tomatoes, or even a prepared tomato sauce. Actually we don’t get v-8 where I live right now so I just made a simple tomato sauce for the picture above. Happy cooking!
